In the vineyard
A field blend from forty-year-old vines on the east and south-east slope, on limestone and slate, at 250 metres. Guyot, 25 hectolitres per hectare.
Farmed biodynamically, Demeter certified.
In the cellar
Partly destemmed, part of it ten days on the skins. Fermented in a 3000 litre Stockinger cask. Then eighteen months on the fine lees. Unfiltered, no sulphur added.
