In the vineyard

Seventy-year-old vines up on the plateau, on limestone and slate, at 300 metres. Guyot, 15 hectolitres per hectare.

Farmed biodynamically, Demeter certified.

In the cellar

Whole bunches, fourteen days on the skins. Fermented and aged in a 500 litre Stockinger barrel, twenty months. Unfiltered, no sulphur added.
